While the concept of drinking wine over several days is not new, no one in the world has dedicated to reviewing wines over several days to show their full potential. A pop and pour wine reviewing approach is the norm but most newer vintages are not ready to drink without a proper decant or drinking over several days.
A simple system
I simply open the bottle and sample a glass or two on day 1 and sometimes will make note of day 1.25, 1.5 or 1.75. I always put the cork back in the bottle and store in a passive cellar with no light. I recommend not storing your bottles in a window in your kitchen. On day 2 I repeat and of course on day 3 while posting a note for each experience.
It is amazing how many wines either improve over 3 days or remain constant in terms of quality.
